Aperitif
Served chilled or over ice before dinner. Should whet the appetite and make the time before dinner pass pleasantly. Aperitif should never suppress hunger or numb the taste buds, hence they are usually dry. Some examples are:

Dessert Wines
Fortified wines, like Port and Sherry, are often classified as dessert wines. Fortified wines are made by adding "Grape Brandy" to wine to increase the amount of alcohol. At what point the alcohol is added during the winernaking process makes all the difference to the final product. Port is sweet because its fermentation process is cut short by adding the brandy during fermentation. On the other hand, Sherry is fortified only after fermentation is completed.

Sparkling Wines
Champagne and Sparkling Wines are generally served before or after meals. These are "active" wines and must be served chilled. True Champagne only comes from the Champagne region of France.
Distilled Wines
Brandy is a distillation of the fermented juices of grapes. Although made all over the world, the chief producer of brandy is France and the US. When making brandy other fruits may be used other than grapes, the type of fruit is used in the name of the Brandy (ie Apple Brandy, Peach Brandy, Cherry Brandy, etc). The best known is Cognac While all Cognac is Brandy not all Brandy is Cognac. Cognac is a brandy distilled only in the Cognac region of France which borders the Charente River. Cognac, by law, may be produced from the white grapes only. Brandy or Cognac should be served in a Brandy Snifter. They range in size from 5 oz. to 34 oz. A standard serving will be 1 to 2 oz. depending on the house policy. Brandy snifters are designed so that the customer may sniff the aroma of the Brandy while drinking it. To enhance the aroma it should be served warmed.
The procedure of warming a brandy snifter:
-Warm it by cupping your hands around the bowl of the glass.
-Carefully run the bowl of the glass over a candle or lighter for a few seconds.
-Warm the outside of the snifter in hot water or take a rocks glass and fill it hald way with hot water and lay the snifter over the top of the rocks glass on its side, then the customer can let it warm as much as they wish.
