Dry beans
Legumes such as beans, peas, and lentils. They provide protein, fiber, vitamins, and minerals to the diet.
Health insurance
financial protection that provides benefits in the case of sickness or injury.
Carotenoids
A group of pigments in foods that are light yellow to reddish orange and are chemical relatives to beta-carotene. Many have some vitamin A activity.
Metabolic fitness
normal blood pressure, glucose, insulin, and lipids.
Whole grain
Grain milled in its entirety, except for the hull. Not a refined grain, which has the bran and germ removed.
Saturated fat
Fats that are solid at room temperature. The exception to this is coconut and palm oil. Consumption of this in excess is associated with increased disease risk.
Product placement
showing products in movies and TV programs.
Cholesterol
A type of lipid made and used by the body found only in animal source foods.
Managed care
an organized system of healthcare services designed to control healthcare costs.
Obesity
extremely overweight.
Fiber
The indigestible part of plant foods. This is not digested by human digestive enzymes but may be metabolized by bacteria in the intestines.
Medicare
the federal government health insurance plan for people who are 65 and older and for certain disabled Americans.
Trans fat
A type of fat created during hydrogenation. Consumption of this type of fat is associated with disease risk similar to saturated fat.
Premium
the amount of money that must be paid each month in order to stay enrolled in an insurance plan.
Hydrogenation
The process of adding hydrogen to liquid (unsaturated) fats to make solid (saturated) fats which are more resistant to oxidation and spoilage. Partially doing this creates trans fats.
Overweight
weight that is greater than the "standard" for one's height.
Air displacement
measures body volume; a formula uses this information and the individual's weight to estimate body fatness.
Skinfold thickness
measures the layer of adipose tissue directly under the skin at several specific locations.
Health maintenance organization (HMO)
a prepaid health plan that organizes healthcare services for its members.
Bioelectrical impedance
estimates body composition by measuring resistance to a weak electrical
Nutrients
Components of food required for the functioning of the body. They provide energy and building materials, maintain or repair the body, and support growth. They include water, carbohydrates, fat, protein, vitamins and minerals.
Calorie
A unit of energy. It food it refers to the amount of energy provided. For physical activity it refers to the amount of energy expended.
Natural, healthy weight
refers to the weight at which each individual has metabolic fitness and can participate comfortably in daily activities.
Stealth endorsement
branding celebrities with specific merchandise by having them use or wear products in public appearances.
Naming rights
the naming rights to public spaces such as arenas, theaters, parks, schools, museums, and subway systems that are purchased by corporations.
Preferred provider organization (PPO)
a health insurance plan that is a combination of traditional fee- for-service and an HMO.
Dual Energy X-Ray Absorptiometry (DEXA)
uses two low-dose X-rays to scan the body and distinguish among fat, lean tissue, and bone.
Professional health organizations
entities that serve to protect and promote the standards of a respective health profession.
Fortified foods
Foods with nutrients, usually vitamins or minerals, added during processing.
Waist-to-hip ratio
estimates central obesity.
Ambient advertising
placing ads in public places such as store floors, at gas pumps, in bathroom
Daily Value
Nutrient standards based on a 2000-calorie diet that are printed on food labels.
Waist measurement
considered a practical tool for estimating abdominal fat. This of 40 inches or more for men or 35 inches or more for women indicates central obesity.
Adiposity
excess accumulation of fat cells.
Tempeh
A fermented food made by fermenting cooked soybeans with a Rhizopus mold (starter). It has a firm texture and a nutty mushroom flavor; can be sliced and fried until golden brown or used as ingredient in soups, spreads, salads and sandwiches. It is very nutritive and contains many health phytochemicals natural antibiotic agents but leaves the isoflavones and most of the saponins intact; it is a complete protein food that contains all the essential amino acids.
Voluntary health agencies
health organizations started by concerned citizens who saw a community health need not being met by any government agency.
Fee-for-service plan
the traditional kind of healthcare policy, in which insurance companies pay fees for the services provided to the insured people covered by the policy.
Underwater weighing
estimates body fatness by weighing the person both while completely submerged in water and above water, in conjunction with measuring the volume of water displaced.
Digital or "virtual advertising"
using computer technology to add products into movie or television scenes that were never there to begin with.
Dietary supplement
A product, other than tobacco, that is added to the diet that contains one of the following: vitamin, mineral, amino acid, herb, botanical (plant extracts), amino acid, metabolite, constituent, extract, or a combination of any of these ingredients.
Medicaid
governmental health insurance coverage for people with low incomes.
Body Mass Index (BMI)
based on an individual's height and weight, either calculated from a formula or read from a table. BMI is not accurate for very short people or for the elderly, and it can misclassify muscular individuals such as athletes as obese.
