Tropicals
Tropical drinks usually consist of a mixture of two juices, pineapple and orange, combined with several kinds of rum and brandy. These drinks are usually very high in alcohol content and are usually served in a "Collins" or "Hurricane" glass. There are various forms of rum: Light, Dark, Spiced, Light-Dry, and 151. Rums is a product of sugar, sugar cane, or sugar molasses. Other ingredients can be coconut juice, other fruit juices, or orgeat.
Tropicals Rules

Tropicals Garnishes
Most of these drinks use cherry garnishes, but in some venues such as hotels, specialty restaurants, and resorts will use a flag, which is a combination of half and orange slice with a cherry that is speared with a sword or toothpick.
Pina Colada

Highballs
These drinks are quick to make and consist of whatever liquor you desire and a mix. Originally, the highball was made with a liquor and a mix usually consisting of soda, water, or a soft drink. The term highball described a signal given to a train engineer when a train was running behind a schedule. A "ball" would be placed at the top of a "high" pole to signal the engineer to travel at top speed. The term "highball" represented moving at top speed and was later associated with drinks that could be made quickly. Today, the mix may consist of anything on the "bar gun" or any of your juices. The drinks in this lesson will typically represent 60% of all drinks served in licensed establishment.
Highball "Tall Drink"

Shooters
Shooters are very popular with younger customers and are served typically in night clubs and sports bars. New shooters arrive every week as bartenders use their ingenuity to create new drinks to sell to their customers. These drinks will vary in measurement and ingredients by establishment and will tend to be trendy. Most establishments make shootersd in cordial glasses, small rocks, shooter glasses, or in soem cases shot glasses.
These drinks are typically 2 oz. of liquor and if chilled and strained will measure out to be approximately 2-3 ounces due to ice melting. In most cases, bartenders ill be pouring more than one of those at a time; therefore it is important to practice making 2-4 of those at a time and checking accuracy. Since it is most common to chill and strain these drinks, we will follow that format in this lesson.

Martinis
These drinks are most often ordered before lunch or dinner, or during the "cocktail" hour. The martini is a very particular drink which is most often ordered "up" and in most cases a premium liquor is preferred. Martinis are typically made with gin; however, vodka is a good substitute. The martini has a history that is not completely certain but the most convincing story gives credit to Barman Jerry Thomas and his invention of the "Martinez Cocktail" named after a Californa city where he mined for gold during his days and tended bar at night. Originally the cocktail was equal parts vermouth and gin but later developed into the drier version served today. Please not that martinis can be made with vodka or gin and in most cases, fot both gin and vodka, premium liquors are called for and it is important to keep up to date with the new liquors coming onto the market.

Manhattans
The Manhattan is mos often ordered "on the rocks" and is usually served with bourbon, but with a simple change to scotch, the name changes to "Rob Roy", if requested. Unlike martinis that typically get "dry vermouth", Manhattans will tell you what type of vermouth is requested by the name...ie, a manhattan gets sweet vermouth, a dry manhattan gets dry vermouth, and a perfect manhattan gets both sweet and dry vermouth. The Manhattan originated in the Manhattan Club in New York, during a party celebrating Governor Samuel Tilden's victory party in 1874. The cocktail was supposedly served at Mr. Tilden's banquet by Lady Jenny Churchill, Winston Churchill's mother.

Juice and Wine Drinks
There are drink recipes which "switch" the liquor ingredient to vary the taste, but it is much more common to "blend" various juices with the cranberry wile maintaining the vodka base. In most establishments, you will need to familiarize yourself with the different types of "tomato juice substitutes" and Bloody mary "pre-mixes". Products will vary however, there are some common substitutes and pre-mixes: Mr. T's Bloody Mary Mix, Major Peter's, Tabasco, Texas Style Bloody mary Mix, and Clamato.

Short Sours
Sour drinks are made using a sweetened lemon juice base. Most of these drinks are blended, because the ingredients do not mix naturally. Sweet and Sour Mix is manufactured in many ways: frozen, powdered, liquid, and concentrate. Sweet and Sour comes in two flavors: Lemon or Lime. These flavors are similar to lemonade and limeade, but are much more tart. Sweetened lemon juice is a mixture of reconstituted lemon juice, sugar, and bar foam. By adding the liquor to the sweet and sour mix, anything can be made "sour"...ie., whiskey sour, scotch sour, Midori sour, Chivas sour, Beam sour, etc.
Short Sour Rules

Cream Drinks
These are drinks that are popular as an after dinner drink and are very rich and creamy. The alcohol content of these drinks is usually 25 to 45% weaker than other mixed drinks. These drinks are usually made with heavy cream or half & half and derive their flavor from the liqueurs used. Vanilla ice cream may be used for these drinks instead of cream. When using ice cream, do not add ice, but instead a splash of cream to soften it. Blend for 15 to 20 seconds only. These drinks may be prepared on the rocks. Drinks are prepared in the same way, except that they are shaken and poured into a rocks glass filled with ice. Substitutes for Galliano are: Florentino, Vallentino, and Neopolitan.

These are two words that mean the same thing. Defined as a distilled spirit seeped or redistilled with fruits, flowers, plants, or their juices or extracts or other naturally flavored ingredients sweetened with 2% to 4% sugar by volume.
